    Founded in 2019 by Laura Evans, SISU was born from a simple idea: to create something beautifully different from the traditional cake. Inspired by a lifelong love of pancakes and a childhood wish for birthday cakes made from delicate layers of pancakes instead of sponge, Laura set out to redefine what a luxury dessert could be.

    What began as a passion project from a home kitchen whilst on maternity leave has grown into the UK's leading pancake dessert pâtisserie. Every milestone has been achieved through a commitment to exceptional quality, handcrafted production and a determination to create desserts unlike anything else on the market.

  • Today, SISU is renowned for its signature luxury pancake dessert slices our own take on the classic gâteau. Each slice is handcrafted using dozens of delicate pancakes layered with our exclusive SISU cream recipes before being finished with carefully selected premium ingredients. Made fresh every day in our dedicated headquarters and production kitchen in Cheltenham, every dessert reflects the craftsmanship, precision and attention to detail that define our brand.

    As demand has grown, so has our vision. Alongside our Cheltenham headquarters and shop, SISU now brings its luxury dessert experience to customers across the UK through our beautifully designed kiosks, seasonal pop-ups, artisan markets and special events. Wherever you find us, our mission remains the same: to create unforgettable desserts that look as beautiful as they taste.

Our unique approach to dessert has attracted national recognition, with features on the BBC, in the Daily Mail and across numerous leading publications. We're proud to have showcased our creations in Selfridges, introducing our handcrafted pancake pâtisserie to customers looking for something truly distinctive.

In 2026, we celebrated one of our proudest achievements by partnering with the award-winning Gloucester Services.Our luxury pancake slices are now available in both the northbound and southbound farmshops, joining an exceptional collection of independent British producers. Gloucester Services is celebrated for championing outstanding local food and supporting artisan businesses, making it a partnership that perfectly reflects our own values of quality, authenticity and craftsmanship.

While we've grown from a small home bakery into a nationally recognised brand, our philosophy has never changed. Every SISU dessert is still handcrafted with care, made fresh daily and created with an unwavering commitment to excellence.
